Chasselas Signature

 

If our Chasselas Legend is floral and dry, we wanted to give more body to this wine and raise it as gastronomic Chasselas. After a twelve month aging in oak barrels, the Chasselas Signature reveals itself to be more complex, with an attractive harmony and balance on the palate.

The innovation: the 2022 vintage was aged in 500 liter « demi-muids » (double barrel). Due to a larger barrel, the contact surface with the wine is reduced: there is more wine for less wood. The result is that this Chasselas is more complex and round while leaving the fruitiness of Chasselas intact. A very beautiful vintage!

We have put all our know-how to good use to raise a Chasselas that is both floral and structured. Lemon-yellow in color, with a fresh, fruity nose and a delicate vanilla flavor on the palate.

Stemming from the commune of Auvernier, on our “Le Champ du Four” plot, only perfectly ripe grapes have been selected in order to guarantee superior quality to this gastronomic Chasselas.



Tasting notes


Eyes

A yellow color with golden reflection, of an higher viscosity, confirming a short maturing in barrels.


Nose

Aromas of citrus fruits, white flowers, mineral-limestone and light vanilla.


Mouth

A round and elegant attack to a soft middle mouth. A still lively wine with a longer finale than as usual for a Chasselas, developed by its maturing in barrel.



Food Pairings

The Chasselas raised in barrel Signature will ideally accompany your apéritif and can also be served with:

> White flesh fishes or lake fishes 
> Sushi
> Seafood
> Hard cheeses
> Ideal servie temperature: 9 to 11 °C
